Preparing chillies

This cooking skill is all about preparing chillies.  This includes how to dice a chilli and cut chillies into strips.  A word of warning when handling chillies.  Chillies contain capsaicin, which makes them hot.  This will transfer itself onto your hands, so be very careful not to rub your eyes or touch anything sensitive before you wash your hands well in hot soapy water.  If your skin has any reaction from handling chillies, then wear a pair of thin disposable gloves that can be thrown away after use.

How to dice a chilli

  1. Cut any stalk from the top of your chilli and cut the chilli in half lengthways.
  2. Scrape out the seeds and the fleshy part using a knife or teaspoon.
  3. Place the chilli onto your board.
  4. Cut the chilli into thick lengths, then cut across the lengths at right angles to form cube shapes.  The number of cuts you make will depend on the dice you require.

How to cut chillis into strips

  1. Cut any stalk from the top of your chilli and cut the chilli in half lengthways.
  2. Scrape out the seeds and the fleshy part using a knife or teaspoon.
  3. Place the chilli onto your board.
  4. Cut the chilli into very fine strips lengthways.  The more cuts you make, the finer your chilli strips will be.
