Fatless sponge mix

Fatless sponge mix – great for making your sponge cakes!

This shows how to make a fatless sponge mix.  Here, we are making enough to fill a small Swiss roll tin, but, if you wish, you can increase the amount of mixture for other recipes, like making an 8-inch sponge will take up to three times the mix, i.e. 6 eggs, etc.

 

Ingredients – Cooking time 12 mins

  • 2 large fresh eggs
  • 75g caster sugar
  • 75g plain flour

Method

  1. Break the eggs into a clean bowl, add the sugar and, using a small electric hand whisk, whisk the mixture until it becomes thick, creamy and pale in colour.
  2. Sieve the flour into the bowl and use a metal spoon to fold the flour into the mixture, nice and gently as we don’t want to knock out the air we have just whisked in.
  3. When the flour has been incorporated, the fatless sponge mix is ready to use.
