Slice and dice mushrooms – how to prepare mushrooms

This cooking skill shows how to slice and dice mushrooms.  Most mushrooms do not need peeling, as there is lots of flavour in the skin.  Also, just wiping the mushroom with a clean, damp cloth is sufficient in cleaning them, if they are going to be cooked.

 

How to slice mushrooms

To slice mushrooms, carefully remove the stakes (save these for soups and stocks).  Place the mushroom cup side down onto the chopping board and carefully slice across the mushrooms in whatever thickness you require.

How to dice mushrooms

To dice mushrooms is very much like dicing an onion.  As for slicing, then take the slices of mushroom and rebuild the mushroom shape.  Holding the mushroom firmly in one hand, cut across it at right angles to the slices.  If you want an even finer dice, before cutting across your mushrooms, make one or two horizontal cuts through the mushroom.
