The potato is an important part of our staple diet and this tasty vegetable is so often taken from granted by us all, but as long as you have a couple of potatoes in the cupboard you will not go hungry! Some simple tips for cooking potatoes and their storage are as follows:
- Many of us buy potatoes from supermarkets, often in plastic bags. When you get home, remove them from the plastic and store them on a wire tray so the air can circulate around the potatoes. This will help to store them for longer
- If you wish to make mashed or creamed potatoes completely lump-free, you could use a potato ricer, which is like a large garlic press, and pass your cooked potato through it
- If you have peeled your potatoes but don’t want to use them immediately, cover them with cold water and add a slice or two of lemon or squeeze a little lemon juice into the water. This will help to keep your potatoes white until you are ready to cook with them
- Try to chose or cut the potatoes into an even size so they will all cook at the same time.
