Ingredients
175g margarine 50g caster sugar 175g self-raising flour Few drops of vanilla extract
Method
1. Pre-heat the oven to 160°C (Gas Mark 3).
2. Lightly grease a baking tray (or use a non-stick mat).
3. Place the margarine and caster sugar in a clean bowl.
4. Use a small electric whisk to whisk until fluffy and light in colour.
5. Fold in the flour and add a few drops of vanilla extract.
6. Spoon the mixture into a clean piping bag fitted with a star tube and carefully pipe onto your baking tray in about 8cm long lengths.
7. Place the baking tray into the pre-heated oven and bake for 15-20 minutes until light golden in colour.
8. Remove the viennese finger biscuits from the oven and allow to cool.
- You can join two viennese finger biscuits together with jam or cream and dip the ends in melted chocolate. Allow to dry and dust with icing sugar to give a homemade cake for afternoon tea.
