Sushi rice – try something different when it comes to rice

Ingredients – Preparation time 30 mins

  • 125g sushi rice
  • 165ml water
  • Sushi dressing


  1. Place the rice in a heavy-bottomed saucepan.  Cover with the cold water and bring to the boil.  Turn down the heat and simmer for 10 minutes with a lid on.
  2. Turn off the heat and allow the rice to stand for a further 15 minutes, leaving the lid on the saucepan.
  3. Place the rice into a large clean bowl and gradually mix in half the sushi dressing.  Mix until the rice is just warm.
  4. The sushi rice is now ready to roll into sushi.

Sushi rice is prepared with short-grain Japanese rice, which has a consistency that differs from long-grain strains such as those from India, Pakistan, Thailand, and Vietnam. The essential quality is its stickiness or glutinousness, although the type of rice used for sushi is different from glutinous rice (Wikipedia).
