Cutting diced cucumber
- Wash the cucumber before using.
- Leave the cucumber unpeeled for this if you wish. Cut it in half lengthways and, using a small teaspoon, scoop out all the soft fleshy middle, including the seeds. This will leave you with two halves of hollowed-out cucumber.
- Cut each cucumber half into half lengthways, hold the four lengths of cucumber together on the board and cut across at right angles to dice your cucumber, making them small or large dice depending on what your recipe requires.
