This shows how to make a fatless sponge mix. Here, we are making enough to fill a small Swiss roll tin, but, if you wish, you can increase the amount of mixture for other recipes, like making an 8-inch sponge will take up to three times the mix, i.e. 6 eggs, etc.
Ingredients
- 2 large fresh eggs
- 75g caster sugar
- 75g plain flour
Method
- Break the eggs into a clean bowl, add the sugar and, using a small electric hand whisk, whisk the mixture until it becomes thick, creamy and pale in colour.
- Sieve the flour into the bowl and use a metal spoon to fold the flour into the mixture, nice and gently as we don’t want to knock out the air we have just whisked in.
- When the flour has been incorporated, the fatless sponge mix is ready to use.
