Ingredients – 2 portions
- 300g baby new potatoes
- 30g butter
- Sea salt (to taste)
- 2 large sprigs fresh mint
Method
- Pick a few mint leaves from the sprigs and put aside for garnish. Don’t forget to wash the mint before use.
- Bring a saucepan of water to the boil and add a little salt to taste. Carefully add the potatoes and the sprigs of mint. Turn down the heat and allow to simmer until cooked for approx. 18–20 minutes, depending on the size of potatoes.
- Remove the sprigs of mint and drain the potatoes in a colander. Place the minted new potatoes in a warmed serving dish or on warmed plates. Add a good knob of butter and garnish with a few small mint leaves.
