This cooking skill is all about preparing cauliflower florets. Cauliflower is great if you are making the old favourites, such as cauliflower cheese. You will need to cut away the large outside leaves, but it’s nice for presentation if you can leave a few of the small, fresh little leaves. Use your small vegetable knife to hollow out the large remaining stalk, as this will ensure a much more even cooking.
Preparing cauliflower florets
- To cut cauliflower florets, cut away all the leaves then, with your small knife, hollow out the large stalk.
- Separate the small cauliflower florets away from the main stalk.
- Trim away any excess stalk from the florets and cut a small cross in the base of each floret, as this will aid a more even cooking.
- Place the cauliflower florets in a colander and rinse under cold running water.
